2 Hour Cinnamon Rolls


I wanted to share a recipe that I found for cinnamon rolls, that are not only quick but delicious. This recipe make 2 dozen (or less depending on the size you cut them) very yummy cinnamon rolls. Saving you about 3 hours!

Start with....
2 cups warm water (115-125 degrees)
4 tsp active dry yeast

Dissolve yeast in water for a couple of minutes and gather these items:

1/2 cup sugar
2 eggs
1 tsp salt
1/3 cup cooking oil or shortening
7-8 cups of flour

After yeast is dissolved add in the sugar and salt and mix together. Then add in the eggs, oil, and 2 cups of flour. Beat until the mixture is smooth. Stir in 4 more cups of flour. Begin kneading dough. Use the last cup to finish kneading the dough on the counter. If your dough is sticky you will need to add more flour adding it in about 1/4 to a 1/2 cup at a time. Now let your dough rest for 20 minutes. It is ok to let it rest right there on the counter. You can cover it if you want but I don't.

Gather these items for the inside of your roll:
softened butter
cinnamon
sugar

Grease 2 13x9 pans with shortening.

Roll dough out into a rectangle about 30" long and 16" wide. Spread generously with soft butter then add desired amount of cinnamon ( I like a LOT) and sugar. Now roll up you rectangle starting at the long side. Cut your rolls out about 1" wide. You should end up with about 2 dozen. If you want to make them bigger you can cut them 2" wide. Place them into greased pans and put them in a warm spot to rise about 45 minutes. Again you can cover them if you want but I don't.

Preheat oven to 350 degrees

Bake cinnamon rolls for about 25 minutes or until they are golden brown. Let cool for 5 minutes. Then you can flip them out of the pan. Serve warm with your choice of icing. ENJOY!
