Potato Soup

I love this recipe. It is not your traditional creamy potato soup. It is very good. I personally like it with a lot of pepper and a side of freshly baked bread.
1 Large onion chopped
6+ cloves garlic minced
2 tbsp. olive oil
5 cubes chicken bullion cubes
10 cups water
10 potatoes peeled & chopped into cubes
1 lb. bacon fried crispy & chopped

Fry onion & garlic until clear and browning. Add 10 cups water with bullion along with potatoes. Bring to a boil. Boil until potatoes are soft. Add crispy bacon just before serving. Salt and pepper to taste. YUM!
